Fish & Foil (It's dinner fun with shiny paper!)

My plate has the Torpedo next to it, Kristin's is Apple Ginger Cider 
I love fish, especially fish and chips. The only problem with fish and chips, other than running out of tartar sauce is that it's fried. Fried means lots of grease and lots of grease means that I become greasy. 

To combat my cravings for fish and chips, I created a new recipe to satisfy my craving. I figured if I add a lot of vegetables and bake it then I thought I could make something enjoyable and fill that void. So I set up my playlist. Every good meal needs music so I made my list; it’s a little aggressive for dinner since there is a lot of chopping.

First we gather all the ingredients:

Look at all the spices

Cool angle shot, yeah I'm awesome with my camera phone
First cut up all the veggies and place them in a large bowl. Then put all the spices on top and mix thoroughly. 

Now shake it like a Polaroid picture
Make a tin foil bowl and fill'er up!

It's looking good
Close the tin foil package, make sure that you seal it tight so no juices get out.

some of those tomatoes exploded into awesomeness
This recipe makes a lot of veggies so used a third of them for leftovers for lunch tomorrow.

Here's the recipe

Fish & Foil Recipe
(My own recipe)


1/2 pint of Cherry Tomatoes, whole
1/2 pint of Baby Bella Mushrooms, sliced
1 Orange Pepper, sliced
1 Medium Sized Red Onion, sliced
4 Cloves of Garlic, smashed
1 Zucchini, sliced 
1 tbsp dried Basil
1 tbsp Roasted Ground Coriander
1 tsp Celery Salt
1 tbsp Paprika 
1 tbsp Adobo All Season Spice
1 tbsp dried Parsley
1 tbsp dried Garlic Powder
1 tbsp Rosemary Salt
1 tbsp Cracked Pepper

8 oz of Pollock (or your favorite white fish)
4 caps full’s Lemon Juice
2 tbsp Olive Oil

Preheat the oven to 375 degrees. First cut up all the veggies and place them in a large bowl. Then put all the spices on top and mix thoroughly. Create a tin foil bowl and place a third of the vegetables in the bottom, place 4 oz of fish on top, then place 2 caps full’s of Lemon Juice on top of the fish and then drizzle 1 tbsp of Olive Oil on fish. Close the tin foil package; make sure that you seal it tight so no juices get out. 

Cook for 15 minutes and it will be awesome.

For sides you can either make baked potatoes (that's what we did), smashed potatoes, orzo, rice or any other starch you like.
