Special Breakfast

Having a pregnant wife, there are times you want to please her. Kristin likes pancakes, me not so much but I do love her and like to bring her joy. So while she went out for a morning walk I decided to make her breakfast. I found this recipe on www.familyfun.go.com and decided to tweak it to something I like. The recipe does not include blueberries and chocolate chips; we had both on hand, so I used them. One thing I have learned is that breakfast food not involving eggs of some sort and my cooking ability do not match. So this wonderful cooking idea ended up being fixed by Kristin. The final product turned out ok, Kristin enjoyed them so it was a success in that manner but I don't think I would make them again.

Peanut Butter Pancakes with Blueberries & Chocolate Chips

  • 1 cup flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 2 tablespoons sugar
  • 2 tablespoons vegetable oil
  • 1 large egg
  • 1 cup plus 2 tablespoons milk
  • 1/2 cup blueberries
  • 1/2 cup chocolate chips

  1. In a large bowl, mix together the flour, baking powder, and salt, and set aside.
  2. In a small bowl, whisk together the peanut butter, sugar, and oil until smooth. Beat in the egg, then the milk. Pour the milk mixture into the flour mixture, stirring just until blended. Finally add the blueberries and chocolate chips and mix together.
  3. Next, lightly coat a griddle or skillet with oil and heat it over medium-high heat. Drop the batter onto the griddle by 1/4-cup measures. Cook until tiny bubbles appear on the surfaces of the cakes, then flip them and cook a few minutes more. Serve topped with banana slices and chopped peanuts, and drizzled with maple syrup. Makes twelve 4-inch pancakes.
