Homemade Strawberry Dounuts

For Christmas I got a mini doughnut pan and have been dying to use it. With the blizzard that recently hit it gave me some time to try a recipe from Pinterest I have never made doughnuts before and being forced by the Governor to stay home gave me a great excuse  to try it, we had all the ingredients so what they hay.

The recipe is really easy; in the future I need to remember to follow the amount to go into the pan. Most of my doughnuts don't look like donuts, they are a little bigger. I also cut the recipe in half since Kristin and I don't need as many sweets in the house, I am of course trying to be a little healthier.

Whole Grain Strawberry Donuts

  • 1 cup whole wheat flour
  • 1 cup unbleached all purpose flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking powder
  • 3/4 cup low-fat buttermilk
  • 2 large eggs
  • 1/4 cup honey
  • 2 tablespoons melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberries, crushed with a fork
  1. Preheat the oven to 400°F.
  2. Spray the doughnut pan with canola oil spray. Set aside.
  3. In a bowl, combine the whole wheat flour, all purpose flour, sugar, and baking powder.
  4. In another bowl, combine the remaining ingredients.
  5. Pour the wet ingredients over the dry ingredients and stir until just combined.
  6. Either spoon the batter into the pan or put the batter into a large ziplock (or pastry) bag and squeeze into the pan, filling about 2/3 full.
  7. Bake for 10-12 minutes, until golden brown on the bottom.
  8. Allow the donuts to cool in the pan for about 3 minutes before emptying out onto a cooling rack.
  9. Once cooled completely, dip in strawberry glaze (see recipe below).
Strawberry Glaze
  • 3 medium sized strawberries, puréed (about 2 tablespoons purée)
  • 1-2 cups powdered sugar
  1. Mix ingredients together.
  2. Dip donuts into the glaze.
