Meatball Fun!!

Before Christmas break our teaching staff decided to have a meatball party. I was out sick when the whole discussion was had about this and one day to come up with a recipe (I found out later that everyone could take a recipe from a book), make them (never done this before) and hopefully they tasted good (they did). 

As I previously mentioned I have never made meatballs before, so Monday night I did a little research, read a half dozen or so recipes and saw a couple of common threads.

1.  Eggs and Breadcrumbs are important binders
2. Choose your ground meat (apparently there are many choices) and
3. You can put anything in it you want

With these three things in mind I created my own meatball recipe and a BBQ sauce to go with it. They were liked by those who braved the spicy BBQ sauce. Unfortunately I forgot to take pictures of the process so this is what they sorta looked like:

And when they are sauced they look like this minus the scallions and fancy bowl (the sauce was more brown than red:

Mike's Meatballs

1.33 lbs ground beef
2 large eggs
3/4 bread crumbs
1 tsp salt
1 tsp pepper
1 tbsp fresh ginger
1 tbsp Sriracha
1 tsp basil (dry)
1 tsp oregano (dry)
1 tsp Thyme (dry)
1/4 cup Parmesan cheese

Bake 450F for 12 minutes until they browned and caramelized

Spicy BBQ Sauce:

1/2 cup molasses
1/4 cup Dijon Mustard
1/4 cup Sweet Chili Sauce
1/4 cup Sriracha
3 tsp smoked paprika
3/4 cup Westfield River Brewing Company Summer Ale
1/4 cup brown sugar
1/2 cup tomato paste
3 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
salt to taste
pepper to taste

Add everything into a sauce pan and bring to a boil. Once you achieve the boil then lower and simmer for 1 hour.
